About the business
The Devils Thumb peak sits in the Daintree Rainforest and towers over Port Douglas, Mossman and beyond. It is an icon of the area, and we felt, the perfect name for our distillery.
We love Rum...not sweetened, not coloured, just authentic rum. High quality, fresh local cane, and tropical ageing enables us to make a product like nowhere else on earth. There is Whisky resting amongst our rum barrels, and while this will be a smaller part of our story, we have high hopes for it. The final, and important, part of our of our story is Gin. Our Gin has won top spot in a number of competitions. Did someone say World's Best Navy Strength Gin in 2022? The judges at the World Gin Awards did!
Pivotal to our journey has been our stills: Roberta and Carrie. They have helped us choose paths that have produced surprising outcomes.
Roberta started her life as a jam mixing tank in South Australia before making a journey north to become a beer wort chiller in Cairns. Overtime, she was relegated to the back of the shed so we helped her venture further north and transition into a 1000lt pot still. Roberta made the World’s Best Navy Strength Gin and Australia's Best Cane Spirit (unaged sugar cane juice rum) at the inaugural Australian Rum Awards. Roberta has recently had some more work done after we converted her to a traditional Jamaican "double retort" pot still and she will now be used primarily for our rum production.
Carrie? What can I say? We didn’t really hit it off at first as she played hard to get and arrived fashionably late. Carrie is now our primary gin still but will also produce some of our lighter styled rum and whisky. With a 1000lt working capacity Carrie has given us some flexibility in our style and is a vital part of the team.
