The synergy between this dynamic duo is evident in their seamless collaboration,
with each of their strengths complementing the other. Passionate about
hospitality and people, Rads excels in organisational and communication skills,
making her an invaluable asset. As for Tommy, he extends beyond the role of
chef, handling everything from on-site kitchen setups to administrative tasks.
With a penchant for freshness and constant change, his menus are never static.
Armed with 10 notebooks brimming with ideas, his expertise shines in feeding
large crowds with top-notch food efficiently, making events memorable with
his delicious creations. Tommy’s culinary prowess is evident, especially when
orchestrating off-site events from a pop-up kitchen. Despite the challenges of
working outside a commercial kitchen, he makes it appear seamless, mastering
the art of crafting dishes that captivate and hush a full room.
Notable achievements include seamlessly orchestrating events like the annual
Taste of Port Douglas long lunch in Market Park and a 300-person Jewish
Kosher wedding. Last year’s highlight involved organising two corporate
conference events for BP fuel stations, each hosting 300 participants. The duo
finds genuine reward in effortlessly managing such occasions and witnessing
the tangible results.
The execution of these substantial events owes much to an incredible group
of additional seasonal staff who share a common passion and work ethic,
guaranteeing a memorable experience for clients.
